We all know cooking in the dorm is not the most convenient. From storing ingredients in our tiny fridges to actually managing to secure the kitchen long enough to cook, it’s far from fun or easy.
I personally never even try anymore. I know even if the kitchen is open, I’ll have to spend 20 minutes cleaning it before getting started.
Luckily, these recipes make it to make a few things without having to store many ingredients or hogging the kitchen for too long. If nothing else, it gives you something to do this fall.

Microwave Rosemary mashed potatoes
Fun fact, I did this on a whim because I didn’t have a pot to make mashed potatoes. I kinda just added everything to taste, but here are the approximate measurements. It’s super simple to make in the microwave and only takes about 5 minutes.
Ingredients:
1 Can sliced potatoes
½ Tablespoon of rosemary (or to taste)
1/4 cup sour cream
¼ cup butter
2 tablespoons cream cheese (optional)
Instructions:
Heat up potatoes in microwave 3 minutes and mash
Heat for 1 minute and 30 seconds
Mix additional ingredients
Casseroles
there are tons of casseroles that use canned or easy to store ingredients. This first one is one my boyfriend and I love, and the second is one I want to try.

Vegetable soup
I love adding Mrs. Dash Seasoning to canned soups. Right now, my absolute favorite is the creamy chicken and dumplings that Campbell’s makes. There are plenty of other great options. It does take some time to find good canned soups, but Campbell’s seems to have most of my favorite types.
Mac and Cheese
My mom has always made this, and it is SO GOOD. If you’re tired of easy mac, you should definitely try this out.

Mozzarella Stuffed Meatballs
This is my absolute favorite thing to make. It does take a bit longer than other recipes on this list, but it is so worth it. I added a bunch of spices, but I don’t think you necessarily have to have as many as the recipe lists. They definitely make a difference, but I know we are working with what we have most of the time.

Sweet potato casserole
This is the only way I like sweet potatoes, so if you don’t like this way there are definitely other options.

Chocolate majesty
This is a recipe my mom used to make all the time. You literally just mix the ingredients together and refrigerate it.

1 cup sugar
Peanut butter fudge
I’ve never tried this recipe, but it looks good. In the past, I’ve mixed together marshmallow cream and peanut butter and refrigerated it.
